Kanko Akakpovi

Board Member

Kanko Akakpovi is a SNAP educator with the University of Minnesota Extension who works primarily with low-income and BIPOC families around nutrition and healthy food access and food security. She also is a part of the Food Council with Rice County SHIP She lives in Northfield and is part of the Food Council with Rice County Statewide Health Improvement Project (SHIP). Kanko believes in Sharing Our Root’s mission and its contribution to food security in Rice County and surrounding communities.

Kanko says: “As an immigrant myself, I am aware of the daily challenges low-income families and non-English speakers face and I was very delighted to learn that Sharing Our Roots make space for us by providing resources such as farming education and land for families to grow their own foods. One thing that most immigrants miss is the connection to the land, and Sharing Our Roots is providing them that key piece that is not only important for their physical health but also their mental health.”
